GLUTEN INTOLERANCE - CELIAC

Celiac disease is characterized by sensitivity to gluten and is the most common autoimmune disease, affecting around 1 in 200 people worldwide. Gluten is a protein found in the grains of wheat, barley, and rye, and is one of the most commonly consumed foods in the world. However, some people can become hypersensitive to the presence of gluten, which can cause an abnormal reaction of the immune system against the small intestine.
This reaction can cause diarrhea, bloating, cramping, nausea, and in some cases lead to stunted growth. Over a longer period of time, celiac disease causes damage to the small intestine, the part of the digestive system that absorbs nutrients from food.
